Located in the Haut-Marais, ISTR naturally takes up residence at 41 rue Notre-Dame of Nazareth, a stone's throw from Place de la République. This buzzing artery has been welcoming for the last few months, more and more creative initiatives, large art galleries and other specialized bookshops.

From lunch to dinner and cocktails and oysters in the early evening, the restaurant ISTR ("oysters" in Breton) welcomes its guests in a cosmopolitan universe, recreating the link between the French regional terroir with influences breton and the best of New York culture and its modes of consumption.

ISTR is above all a human adventure. That of three passionate friends, Philippe Morin, Pascal Gauthier and Pierre-Michaël Smague, but also that of a promise made 20 years ago, has become a reality today.
